Beef Enchiladas

Hey everyone… I hope all is well in your neck of the world. It’s been about a week with no posts so I figured, I need to get something out there. Lol. Truth be told, I’ve just been making re-runs or we’ve been eating out. So, nothing new. I’ve featured beef enchiladas before but this one is a little bit different.

Here we go…

Brown up some ground beef, about two pounds.

Add a capful (2 Tbs) of your favorite taco/chili seasoning. Mine is Wahoo Chili seasoning.

Add some cheddar cheese, about 2 cups.

Now, I made half of these with beef, cheese, and sour cream (1/2 cup).

And the other half with beef, cheese, and a can of diced tomatoes.

Pour some green enchilada sauce on the bottom of a baking dish…

Scoop some meat mixture into a fajita sized shell.

Roll up and add to your baking dish. Pour some green enchilada sauce over.

Next, take some already prepared queso, warm it up, and pour on top.

Into a pre heated 450 oven for 30 minutes and…

This rocked! Beefy, cheesy, a little spicy… Everything you could want. 🙂

Holiday Ham

I call this holiday ham but you can have it any day the craving hits. In fact, we had this on a plain, old Monday night. Lol.

This recipe is super simple and will deliver a juicy, sweet ham that you all will love.

First put two cups of brown sugar in the bottom of a crock pot.

Place your ham on top then add a can of pineapple chunks, juice and all…

Top with a cup of brown sugar.

Cook in the slow cooker on low for 5 hours. 

It’s simple and delicious. 🙂
