Paula Dean’s Pineapple Casserole

Ah… I love Paula Dean dishes. Anytime I see something of hers, I give it a go. Her pineapple casserole is no exception. It’s buttery, cheesy, and sweet. It has all the earmarking of a great side dish and it’s so incredibly easy to make. 

Let’s start by taking one cup of sugar, 6 Tbs of flour, and 2 cups of sharp cheddar cheese and mixing that together in a bowl.

Next, we are going to add 2 cans of pineapple chunks, drained. (Reserve a third of a cup of the pineapple juice)

Add to a greased baking dish, 8×8.

Melt a stick of butter, crush up one cup of ritz crackers, place in a bowl and mix with the reserved pineapple juice.

Once mixed, place in your baking dish.

Into the oven at 400 for 30 minutes.

This one is so simple and it is so very tasty. Give it a try. You will thank me later. 🙂

Sweet Potato Casserole

Potatoes are a staple in our house and sweet potatoes are OH so good. They are a healthier spud on a normal basis but not today. Lol. Today, it’s about straight yumminess. 

Here we go…

Put a stick of butter in a bowl. Do you see how I start my potato dishes? 😉 

Cook up 5 lbs of sweet potatoes. I use s rice cooker/steamer to cook the potatoes.

Add a half of cup of brown sugar and start to mash.

Add a quarter cup of milk.

If the potatoes are too dry, add a little more milk but mash completely.

Place in a greased baking dish.

 Add marshmallows.

Bake at 350 for 30 minutes.

Yummy,  right?

These were so delicious. Pictures just don’t do these spuds justice. 🙂

Holiday Cobbler

We all have our favorites when it comes to sweet treats for the holidays, right? Pumpkin pie, Apple pie, nut rolls, Christmas cookies… You name it. Today, I’m going to bring you a cobbler that epitomizes holidays with Apple’s and cranberries. 🙂

So, let’s get this started.

In a bowl, add a package of fresh cranberries (12 ounce) and a jar of caramel sauce.

Mix and add to a greased baking dish.

Next, add some Apple cake mix to a bowl.

Whisk an egg an add along with a stick of butter to the mix and mix until crumbly.

Add to your baking dish.

Bake at 350  for 50 minutes.

It’s of the hook good!!! Second year I’ve make it for Turkey day and it was the first dessert finished off. 🙂 give it a try.

Traditional Stuffing

Nothing says the holidays like some delicious stuffing and there are so many variations of it out there. But when I have a big meal to prepare, I tend to go with a basic, traditional stuffing. It his on all points: buttery, most, celery for the crunch… You know, the basics.

The pics I’m going to show is a double batch but the description will be for a single batch. 

Melt 5 Tbs butter in a pan.

Add a chopped onion

Chop 2 celery stalks and add to the mix.

Cook for about 5 minutes then add a 2 cups of chicken broth.

Bring to a boil

As that was getting to a boil, add a package of your favorite seasoned stuffing to a bowl. I know, cheater right? Lol. Anything to make our lives easier works for me. 🙂

Pour your celery/onion mix on top.

Mix, place in a baking dish, and bake for 30 minutes at 350.

BOOM! Simple and tasty. Enjoy. 🙂

Crazy good Mashed Potatoes

A great mashed potato goes with just about anything. And today, I’m going to share my go to when it comes to this delicious spud. Super delicious. Super easy. 

In a bowl, drop a stick of butter.

Let that chilax to room temp. Next, peel, chop, and cook 5 lbs of russet potatoes. Once done, fork tender, put on top of the butter.

Now,  everything else is by taste. I start with a quarter cup of milk and chicken broth each, a tsp of salt and a coat of pepper. I mix then taste.

I add a little more milk and stock. Mix again. 

The little extra usually gets the job done. Enjoy!

A Simple Bird

Hey everyone… Today, I’m going to share the bird of my Turkey day celebration. I’m going to share it because poultry goes with any day of the week. Enjoy!

First key to making a juicy bird is to use a cooking bag. When you do use it, you want to put 2 Tbs flour in the bag so it doesn’t burst.

Next, to get a crispy skin… Oil your bird. I use a garlic infused oil. Great flavor!

Brush it on.

Next is the seasoning. I use rustic herb as it has a great blend of rosemary, thyme, and garlic. It was born for poultry.

I use a cap full which is 2 Tbs.

Now, put your bird in the bag and cut 5 slits in it.

Into the oven, 350° for four hours as it was a 20 lb. Turkey.

Came out moist and delicious. I hope you give this bad boy a try. It’s a winner. 🙂

Bacon Cheeseburger Pasta

The title says it all… BACON. CHEESEBURGER. PASTA. It really does. Today, I’m going to share a dish that his on all of those flavor notes and you are gonna LOVE it. Best I can describe this dish is homemade hamburger helper. 🙂

Let’s get started…

Brown some ground meat, about a pound and a half.

Cook a half pound of pasta. You can use shells or elbow Mac. I used cavatapi as it is my favorite pasta shape. Now cook that till al dente. Once done throw the ground meat and pasta in a pot.

Cook up a half pound of bacon, chop, and add to the pot.

Next, in a bowl add a 15 ounce can of beef broth, 3 Tbs of ketchup, 1 tsp Worcestershire, and 4 Tbs  of flour. Whisk and add to the pot.

Cook until bubbly. This will start to thicken the sauce. Once bubbly, cook for 2 or 3 more minutes.

Next, add 2 cups of sharp cheddar.

Cook over a medium heat until the cheese is melted.

Plate up and enjoy. 

If you have kiddos, they will love this. Cheese, bacon, pasta, and meat. A no brainer for them.
