Creamy Chicken Pasta Carbonara

If you love pasta, if you love creamy sauces then you are going to LOVE today’s recipe. Carbonara is one of my favorites and I’m going to share a simply delicious one with you today.

We start with a rotisserie chicken.

Rip it apart and set aside.

Cook some peas and put aside. I just used a 12 ounces steamable bag.

Cook a pound of pasta. Set aside.

Ok. Are you tired of “setting aside” yet. Lol. 

Ok. Let’s cook up a half a pound of bacon.

Chop up three cloves of garlic.

Add to your bacon towards the end of the cook on the bacon.

In a bowl, whip up 8 egg yolks.

Add a cup and a half of heavy whipping cream.

Add a cup of parmesan cheese.

Salt and pepper, about a tsp of salt and a half tsp pepper.

Next, chop up a 1/4 cup of Italian parsley.

1/4 cup of basil.

Mix into your sauce.

Let’s get this together…

Add your chicken to your bacon.

Add your pasta

Add your peas

Pour your sauce on top

Mix and cook on low-med heat not too hot so you don’t scramble the eggs.

Plate up and top with parmesan.

Mix and enjoy…

My wife especially loved carbonara dishes and she said that it was, “FABULOUS!”
