Macaroni Salad

Easy peasy one today: Macaroni salad. I know that we are in the fall and this is a summertime dish but I had to make it anyway. 

Get some pasta cooking. A pound. Cavatapi is my favorite, so…

Also, hard boil six eggs and set aside. Once cooled, chop.

Let’s get the sauce together.
A cup and a half of mayo.

Add a Tbs of Onion Onion

Two tsps of mustard.

Mix together and set aside.

Chop up a green pepper.

Now, let’s get this thing together.

Pasta in a bowl…

Add your eggs, green pepper, and mayo mixture.

Mix.

Add punch of salt.

I say punch of salt as a tribute to Al Pacino’s role in Donnie Brasco where he was cooking and referred to this as a punch of salt. Lol.

Then add some pepper.

And  you have it.

Yummy! Last summer dish. I promise. Lol.

The Butter Burger

Haha… Do I have a GREAT one for you today. I was watching an episode of Triple D a while back and btw, I LOVE Triple D…

He did a show on this burger that I knew that I had to try, the Butter Burger. As I recall, the chef that made the burger made a compound butter with some parsley, basil, garlic to name a few. I made and shared a shallot tarragon butter a while back and am using that in this burger.

We are using some nice ground meat and compound butter.

A couple of pats, that’s it.

Stick them in the middle of the burger.

And cover it up with that beef that’s on the side.

Get them on the griddle.

I normally cook my burgers about 5 minutes each side.

Once you flip the burger, more compound butter on top.

Add some cheese.

Time to plate it up. I used a nice Pepperich farms potato bun. Add a piece of cheese for the bottom bun. Just because folks, just because.

Add your burger to that.

For this burger, a little mayo and ketchup ave you are good to go…

Doesn’t that look delicious?!?! Well, it was…

Bacon sauced Sloppy Joes

Sloppy Joes, slop, sloppy Joes… Sloppy Joes, slop, sloppy Joes… Can you hear Adam Sandler singing that in your head? Well, I can.

With a 15 and 10 year old in the house, kid friendly meals are a staple and sloppy Joes get the job done. Let’s get started on this one…

Start by browning up some ground meat. I use beef but you could certainly use ground turkey if you so choose. Add 2 tsps. of garlic pepper seasoning.

Add 8 ounces of tomato sauce.

We are going to kick it up a little with 1 Tbs of Simply Salsa.

And next, I did mention bacon right? Ha! I use Tastefully Simple’s Bacon Pepper Jam. 3 Tbs, by the way. It has wonderful flavor. Bacon, peppers, jammy goodness… It’s all in there.

Mix that up and simmer for about 10 minutes.

Once cooked, add to a sweet Hawaii bun.

My wife LOVES cheese on her sloppy Joes so…

Kids love tater tots and there you have it. 

See how I spruced it up some broccoli.

Creamy Chicken Pasta Carbonara

If you love pasta, if you love creamy sauces then you are going to LOVE today’s recipe. Carbonara is one of my favorites and I’m going to share a simply delicious one with you today.

We start with a rotisserie chicken.

Rip it apart and set aside.

Cook some peas and put aside. I just used a 12 ounces steamable bag.

Cook a pound of pasta. Set aside.

Ok. Are you tired of “setting aside” yet. Lol. 

Ok. Let’s cook up a half a pound of bacon.

Chop up three cloves of garlic.

Add to your bacon towards the end of the cook on the bacon.

In a bowl, whip up 8 egg yolks.

Add a cup and a half of heavy whipping cream.

Add a cup of parmesan cheese.

Salt and pepper, about a tsp of salt and a half tsp pepper.

Next, chop up a 1/4 cup of Italian parsley.

1/4 cup of basil.

Mix into your sauce.

Let’s get this together…

Add your chicken to your bacon.

Add your pasta

Add your peas

Pour your sauce on top

Mix and cook on low-med heat not too hot so you don’t scramble the eggs.

Plate up and top with parmesan.

Mix and enjoy…

My wife especially loved carbonara dishes and she said that it was, “FABULOUS!”

Buffalo Chicken, Potatoes, and Cheese

All the points are going to be hit on this one today. Spice, potatoes, and cheese… You can’t go wrong with this one. 

Start with chopping up six potatoes and put them in a bowl.

Take three chicken breast and cut them up in chunks. Add them to the bowl with potatoes.

Add a third of a cup of garlic infused oil.

2 Tbs Frank’s RedHot.

Next up, some spices…

2 tsps each of garlic garlic, onion onion, and smoked paprika. One tsp salt and a half tsp of pepper.

I mix half at a time to help ensure even coating.

Mix then add the rest of the seasoning.

After all is mixed, add to a baking dish.

Bake in a preheated 400° oven for 50 minutes.

Then add two cups of cheddar.

Bake for another 10 – 15 minutes.

Dish up and serve with ranch. 🙂

Baked Rigatoni with Sausage

Today, I’m going to share one of favorite go to meals: Baked Rigatoni with Sausage. You can use ANY pasta that you want and any type of sausage. Rigatoni is one of my favorites and my wife doesn’t like it spicy so I went with sweet Italian sausage.

Let’s get started…

Preheat your oven to 350°

Get your sausage cooking first. All we are looking for is a nice sear on all sides because the sausage will finish it’s cook in the oven.

Cook and drain your pasta. I cannot emphasize this enough, do not over cook the pasta. Al dente or with a little bite is what you are looking for. This will cook once again in the oven and you don’t want mushy pasta.

Sauce is really easy to put together. We are going to start with a can of crushed tomatoes and a can of diced tomatoes.

Put them into a pan…

Now, I usually use Tastefully Simple’s Mama Mia Marinara mix but today I’m changing it up a bit. I’ll be using 2 tsps each of onion onion, garlic garlic, Italian garlic seasoning, and pizzeria seasoning.

Add to your sauce…

And stir…

Now, let’s start to put this together…

Add a layer of sauce to a baking dish…

Add your pasta then the rest of your sauce.

Sausage…

Add two cups of Italian cheese like mozzarella or an Italian blend and bake for 25 minutes.

Once done, plate up and enjoy!!!

This really is a simple and delicious meal. Try it out!
