Chicken Saltimboca

Ok… Ok… Ok… Another meal from our meal collections and I’m going to warn you, this is straight up delicious! No kidding! Last night, I made Chicken Saltimboca. Yum!

I took two chicken breasts and cut them in half and seasoned them with salt and pepper.

Combine a half cup each of flour add parmesan cheese.

Coat your chicken.

Heat three Tbs. of Avocado oil (the avocado oil is great because it has a nice light taste and it has a high cook point).

Now, cook your chicken until they are golden. About 8 – 10 minutes, depending on the thickness of your chicken. You want to make sure it’s 165°. 

We are going to take these guys and make a lemon dill sauce. Start with 1/3 cup of sour cream and a 1/4 cup of milk.

Wish them together and microwave them in 10 second intervals until is heated then add the lemon dill mix.

Now, let’s assemble this yumminess.

To your chicken, add some thin slices of ham (I used prosciutto).

Add mozzarella (I used a four cheese mix).-I was at Trader Joe’s and was getting carried away. Lol.

Melt the cheese and top with the lemon dill sauce.

Serve with a veggie and enjoy!
