Fiesta Chicken Layered Enchiladas

Today, I’m going to share a recipe one of my friends shared with me.

This one has a little bite to it so if you like spicy… (it’s not melt your face off spicy but it does have some kick)


2 cups of chicken

1 jar of Corn, and Black Bean Salsa

1 cup sour cream

2 Tbs Fiesta Party mix

18 corn tortillas

2 cups mild cheddar

Preheat your oven to 350.

Sautee and chop up two cups of chicken.

In a bowl, combine your chicken, sour cream, fiesta seasoning, and salsa.

Mix that together.

Coat a 9x 5 pan with cooking spray and then later it with nine corn tortillas.

Add half of your chicken mixture.

Next is cheese, one cup.

Then repeat so you have two layers.

Pop in the oven, covered for 45 minutes then take foil off and bake for 10 minutes. You will end up with something like this…

This was a spicy, delicious dish. My wife said it was a do-over which means she LOVED it! 

The only thing I would do different next time is bake it in a 8×8 pan to make it thicker but overall this dish is excellent. I served it with some sour cream and salsa. 🙂
