Easy Garlic Bread

Whenever my family and I eat pasta, we usually go with a nice salad and some good bread. The other day, I made some garlic bread that everyone enjoyed acc it was super simple to make. Check it out…

Ingredients

1/2 loaf fresh French or Italian bread

1 Tbs Tastefully Simple’s Garlic Garlic

1 stick butter

1 tsp basil

1/2 cup mozzarella

Soften the butter and add the garlic garlic & basil. That’s what’s in the bowl above.

Next cut the bread.

Spread your butter mixture on the bread.

Add your mozzarella.

Bake in a preheated 400° oven for 7 minutes then broil for a minute or two until brown.

Yummy, right? Well, it was.

Give it a try. You’ll love it. 🙂

Chocolate Poundcake with Peanut Butter Cream Frosting

Just the title has my mouth watering. 🙂 I like this recipe for the boys… Aw who am i kidding… I LOVE this for me as well. Simple to put together and absolutely delicious!

Let’s start with preparing the chocolate pancake as directed.

Take a box of that, 1 stick of butter, and 1 cup of water. Mix in a bowl. No mixer, just a spoon. Swirl it around 25 times. DO NOT OVER MIX.  And then into a preheated 325 oven for 55 minutes. Once done, pull out and place on a cooking rack until cool.

For the frosting:

1.5 cups powdered sugar

3/4 cup of peanut butter

1 tsp vanilla

1/2 stick of butter

Whip the butter, vanilla, and peanut butter in a mixer until smooth. Gradually add in the powdered sugar until all is creamy. 

Ice the top of your cake with this. 

Chocolate peanut butter lovers rejoice!!!

This really is as delicious as advertised. I hope you all give it a try. 🙂

Feeding the Masses with Meatloaf and Mac n Cheese!

So… Our stay here in Texas has been great and I’ve been the cook, for the most part. The house currently sits with four adults, two teenage boys (16 & 15), three pre-teen boys, and one little two year old. 

This guy… Lol.

All I can say is that we eat a bunch…

This recipe was just enough to feed this group. Here we go…

Take 2 lbs of ground meat (80/20) and 1 pound of ground pork and place it in a bowl.

Add to it…

1 Tbs Tastefully Simple’s Onion Onion

1 Tbs Tastefully Simple’s Garlic Garlic

1.5 cups of ritz crackers

3 eggs

1 cup of water

1 tsp salt

1/2 tsp pepper

Then take 1.5 cups of ketchup, 1 Tbs mustard, 1/2 cup of brown sugar

Pour onto meatloaf and bake in a preheated oven at 350° for 1 hour. This is what you will come away with…

This is so yummy. You will absolutely LOVE it!!!

And onto the Mac n Cheese…

Boil a pot of water and cook your pasta according to the directions on the box. I used medium shells and boiled them about 10 minutes.

In a small saucepan, add 2 Tbs butter and flour. Cook for two minutes. This will cook the four taste out.

Add your milk, 2 cups. Continue to wisk.

Next, add your cheese. 2 cups mild cheddar.

Wisk until smooth.

Add 1 Tbs of Tabasco, 3/4 tsp salt, and 1/2 tsp pepper.

Mix then toss with the cooked pasta.

Yummy! Seriously! This was a knockout dish. Everyone loved it. 🙂

Smashing Peanut Butter Cake

Let me tell you a story of a cake that will literally touch your very soul… Lol. While we are staying with the in-laws here in Texas, my nephew made this peanut butter cake that was amazing!!!

If you LOVE peanut butter like I LOVE peanut butter, this cake will change your life… Again, lol.

Here are the ingredients:

The top two are for the cake, the rest is for the icing. Now, the top two are combined with whatever the box cake calls for and cooked according to the directions on the box. My nephew split the batter into two round cake pans.

The rest was cooked over a low-med heat until smooth. Here is what you are left with…

Make this. You will thank me later. 🙂

Leftover Roast Beef Sandwiches

The other day I shared a recipe “Roast and Potatoes.” There were leftovers and for lunch I repurposed the meat. I made these delicious beef and cheddar sandwiches. Everyone LOVED them. 

I took some fresh French bread, buttered both sides, heaped on some roast & cheddar cheese and BLAMMO…

Grilled to perfection. 🙂

Add some mayo or bbq sauce and it will hit the spot. Next time you have leftover roast give it a try. It might make your favorites list.

Delicious White Queso

As I shared in my guac post, our family LOVES chips and dip. And if I didn’t mention it, I am now. 

This is a real easy recipe and the group will LOVE it.

Ingredients:

1 lb pepper jack cheese

1 block of cream cheese

8 ounce sour cream

3/4  cup whole milk

1 can Rotel tomatoes with green chillies

1 Tbs Tabasco

And here’s the simple part. Put all ingredients in a sauce pan over low heat, wisk until smooth. 🙂

Even simpler, get your favorite chips and enjoy!

Roast and Potates

Old styled, stick to your ribs home cooking. I LOVE ME SOME OF THAT!!! I’ve been cooking for about 10 people down here in Texas. This was a no brainer and super simple.

Ingredients:

3 – 5 lb chuck roast (I used 5)

Garlic pepper seasoning

1/2 cup beef broth

Get your trusty crock pot out and put a 1/2 cup of beef broth in it. Season your roast with your favorite garlic pepper seasoning. I use Tastefully Simple’s because I love the flavor. And get that going for 8 – 10 hours on low. Because you’ve used chuck roast, there would have been plenty of marbling in the meat. So, you will have a melt in your mouth roast. Shred it and serve it!

As for the potatoes…

Ingredients:

5 lbs potatoes

1/4 cup Olive oil

2 tsp paprika

2 tsp salt

2 tsp tastefully simple’s Italian garlic seasoning

Dice your potatoes. Your call on leaving the skin on. If you do, make sure you wash them well. Drizzle with the oil and seasonings. Put in a greased baking dish and bake in a 450 oven for 50 minutes, tossing every 15 minutes. Here’s what you get…
