Rustic Smashed Potatoes

I know… I know… I’ve been a little laxed due to vaca but today I’m going to share with you one of our favorite side dishes: Rustic Smashed Potatoes. Yum!

Ingredients

5 lb bag of red potatoes

Avocado oil to coat

Rustic Herb seasoning

Pre heat your oven to 450

Clean your potatoes.

Now, before I start I’m going to give my wife credit for this one. SHE DID THE COOKING!  And it tasted GREAT!

Par boil your potatoes.

You will want to boil them for about 15 minutes then drain.

Oil a baking sheet. You can use whatever you want but we use Tastefully Simple’s Avocado oil because it brings such great flavor.

Put the potatoes on the baking sheet.

Get your potato masher out and smash them down to about an inch thickness. (No pic)

Do the whole pan.

Now, you will want to drizzle oil on the top. This will allow the top to get nice and crusty. Again, we used tastefully simple’s Avocado oil.

Let’s add tastefully simple’s rustic herb. I LOVE this spice because of the rosemary and thyme. They work so well together in this dish. Yum!

Pop this into your preheated oven for 25 minutes.

A crusty, rustic potato dish is what you will get.

Cooler corn

Ok folks… I have a quick and easy one for you all today. Cooler corn. With summer upon us and farmer’s markets everywhere, you can get some great tasting sweet corn.

This is so simple I don’t know why I haven’t been doing this from the start.

Get your cooler out.

Put some corn in it…

Take some water and get it boiling.

Pour it over the corn.

Close it up and let it sit. 45 minutes later you will have perfectly done corn. Add some butter, salt and pepper, and you will have some good eating!!!

Sunny Lemon Poundcake… So yummy!

Today, I’m going to share with you a light, refreshing poundcake that will delight your crowd.

Preheat your oven to 325.

First you start with the cake mix,  1 stick of butter, and 1 cup of water…

Mix with a spoon. 25 twirls. DON’T mix till smooth. It will be lumpy.

Pour into a loaf pan.

Bake in your preheated oven for 55 minutes. Place on a chilling rack and let cool completely.

Now, let’s prepare the icing.

Inside of the box there were two packets of mix. The first one we used was the pound cake mix. The second is the icing. It’s powdered sugar. To that you will add 2 Tbs melted butter and 2 Tbs of water. Wisk.

Once your pound cake is cooked, spread the icing on top and enjoy!

An easy, peasy absolutely DELISH appetizer!!!

Hey all… I’m going to share with you one of our families favorite appetizers. Sweet Pepper Jalapeno jam over cream cheese… I made this for back to back parties and it was DEVOURED!

One of the selling points of tastefully simple, at the beginning, was “you can make something delicious in two ingredients or less!” That was the motto and it stands true.

Ingredients:

1 block of cream cheese
1/3 – 1/2 cup sweet pepper jalapeno jam
Crackers

That’s it!

Now, I would love to say that I have time to make my own jam but I don’t. We’ve got a full household and just no time for that. Maybe down the road but not now which is why I love this product line. It’s geared for busy people.

Here we go…

Put your cream cheese on a plate.

Add your jam…

BAM!!! That easy. Serve with crackers. You will thank me later for this. 🙂

One of the best burgers EVER!!!

I am certainly a blessed guy. It’s Father’s day and I am getting pampered. My wife is doing ALL the cooking today and I wanted to share this GREAT burger!!!

That crazy burger has got mustard and ketchup on it, lettuce and tomato, 85/15 ground beef seasoned with seasoned salt, grilled pineapple, and avocado. ABSOLUTELY DELICIOUS!!! The pineapple was so sweet especially with the it being caramelized. So good.

Give that convo a try. You won’t be disappointed!

Chocolate Chip Pancakes

Yesterday, our middle guy, Hayden, turned the big 10. He has been basking in the glow of birthday “week.” Since, yesterday was his birthday, he got a special breakfast treat, Chocolate Chip Pancakes. Dessert for breakfast. 🙂

Ingredients:

1.5 cups of all purpose flour

1 eggs

3 Tbs butter, melted

1 tsp vanilla

1 tsp salt

1 tsp sugar

1 Tbs baking powder

1 1/4 cups of milk

Handful of chocolate chips

Combine everything in a bowl

Mix and pour 1/4 cup portions of your batter on a heated griddle.

Add chocolate chips.

Let cook until bubbles start to come through the batter then flip.

Cook until they are golden brown on the other side and plate…
