Rustic Herb Crusted Salmon

Hey everyone…

Today, I’m sharing one of my favorite recipes using one of my favorite Tastefully Simple spices. I love salmon and we have many spices and sauces that lend a great flavor to salmon but I have to say our Rustic Herb is my favorite. The blend of rosemary and thyme in Rustic Herb is wonderful on this delicious fish.

I use this spice on salmon, chicken or turkey, and on smashed potatoes. It’s versatility is amazing!

Let’s start by preheating your oven to 450. Take a baking dish and put 2 Tbs of butter and olive oil in the pan and pot it in the oven. You want this dish hot when you put the salmon in.

Now onto the fish.

I lay them on a cutting board, skin side down and season them liberally with Rustic Herb.

Place in the baking dish and cook for 5 – 6 minutes.

Flip the salmon and remove the skin. Easily done after cooking for a few minutes. Pulls right off with a fork.

Once skin is removed, apply Rustic Herb once again and bake for 5 – 6 more minutes. Now, traditionally speaking, with this thickness of salmon, 4 minutes on each side would be sufficient to a true salmon lover but my family likes it a little more on the crispy side. Hence, the 5 – 6 minutes a side.

Remove from the oven and plate up.

Whether you like your salmon crispy or a little more on the medium side, you will love this flavor combo.

Apple Cake

Have I got a quick and easy one for you today. It’s our Nana’s Apple cake. I will share a secret with you all… I can’t bake. Not in the traditional sense, anyway. This is one of the reasons I LOVE, LOVE, LOVE Tastefully Simple is because I don’t need to know how to bake and I can make something scrumptious and it’s so easy.

I tell anyone who will listen that one of my favorite pies is apple. Who doesn’t like apple pie, right? But I can’t make one but I can make this and even though it’s an apple cake, it gives you all the delicious flavor of an apple pie without having to know how to bake an apple pie. Let’s get started…

Ingredients:

Tastefully Simple’s Nana’s Apple Cake mix

2 cups of apples (any kind, I used gala)

2 eggs

THAT’S IT! It may look wrong going into the oven but I will tell you, it will be alright when you are eating it. Lol.

Chop up 2 cups of apples. Since mine were small gala apples, I needed 5. I’ve made this with big red delicious apples and only needed 2. The amount of actual apples will vary.

Throw them in a bowl with the eggs and Nana’s mix and mix until all looks semi wet. It won’t look all that wet because all you have is 2 eggs in there but all is fine.

Throw everything into a greased 8×8 pan.

Bake in a 350 oven for 50 minutes and you will get this deliciousness…

We served it with some Breyer’s Vanilla Ice Cream and it was delish!

Savory Pot Roast

Hey everyone…

Happy Friday! I hope your week was well. Mine was great and I’m looking forward to some holiday festivities this weekend.

The recipe that I have for you today is a Savory Pot Roast. It is featuring two of what’s becoming my favorite tastes and products: the Mushroom and Merlot sauce and Roasted Garlic & Herb cheese ball mix. Wonderful flavors here and you will love this combo of merlot and garlic! And as you can see from the pic, I’ve emptied the Merlot sauce, again! 🙂

Ingredients:

3 lbs of chuck roast (of whatever your favorite cut is)

1/2 cup Tastefully Simple’s Merlot & Mushroom sauce

14 oz can of beef broth

1 packet Roasted Garlic & Herb cheese ball mix

 

Put your protein in the crockpot.

In a bowl, mix the merlot & mushroom sauce, broth, and roasted garlic & herb mix.

Pour it over your protein.

Cook that bad boy for 8 hours on low. Once done, shred up and serve.

Again, the flavor is fantastic! Enjoy!

Pizzeria Dipping Oil

I’ve got a quick and delicious one for you today. Pizzeria Dipping Oil. I LOVE bread. A good ciabatta and some dipping oil and I am in heaven and this one does the trick. Two ingredients. That’s it. A 1/2 cup of olive oil and 2 Tbs of Pizzeria seasoning.

Start with 2 Tbs of Pizzeria seasoning.

Add 1/2 cup of olive oil.

Let sit for 15 minutes to allow the dehydrated spices to absorb the oil. Dip with bread and enjoy!

One of the reasons I love this spice is because of the taste. No fillers here. Garlic, Tomato, Onion, and Salt… that’s it for ingredients.

You can also throw it on top of a meatball sub for some added flavor or try it as a flatbread. Flatbread, some oil, sliced tomatoes, fresh mozzarella, and sprinkle the Pizzeria seasoning on top. Broil in your oven for 2 – 4 minutes or until golden brown.

Lazy Stuffed Pepper

Love the title on this one… This is just a broken down stuffed pepper. Two of my boys don’t like traditional stuffed peppers. In fact, they don’t eat the pepper portion when I make it that way. However… with this recipe, everything gets eaten up.

I hope everyone is well… Everything is going well on my front. The craziness of the holidays and the business of the boys with school and the uptick in activities this year has begun. It’s great to have a simple recipe that everyone loves that you can throw together in a pinch. I hope you all enjoy.

Ingredients:

2 bell peppers

1/2 of a large onion or 1 med onion

16 oz of chicken broth

15 oz can of tomato sauce

1 cup of minute rice

1 package of cherry tomatoes

1 Tbs Tastefully Simple’s Simply Salsa

1 tsp Tastefully Simple’s Garlic Garlic

1 Tbs of Tastefully Simple’s Mama Mia Marinara

1.5 cups of cheddar jack cheese

1.5 lbs of ground meat of your choice

Start off browning the ground meat

While the meat is getting happy, chop up the peppers and onions.

Big chances are fine.

Once you have almost all the meat browned and the peppers and onions are chopped, add them to the pan with the meat.

Cook for about 5 – 7 minutes. While that is happening, quarter the cherry tomatoes and add 2 Tbs of Simply Salsa. Let sit.

Once onions and peppers are cooked, add the tomato sauce, chicken broth, and diced tomatoes. Bring to a boil then reduce heat and let simmer for 25 minutes.

Once simmered, remove from heat. Add 1 cup of minute rice, stir, and let sit covered for 5 minutes. Top with cheese.

Serve up in a bowl and enjoy!

This is one of my family’s favorite meals. As my wife would say, “Do over!” I love hearing that. 🙂

Coconut-Crusted Chicken Strips

Hey everyone…

I hope all is well. Everything is ratcheting up due to the holidays which means that mealtime prep has become cumbersome. Will we be eating the same boring meal or will it be something new. That’s what I love about Tastefully Simple’s 10 and 30 meal collections. They use our wonderful products, you get recipe cards, and shopping lists. Everything to eliminate the stress from dinnertime.

Tonight’s meal comes from our Hearty 10 meal collection.

Coconut-Crusted Chicken Strips

Here are the ingredients:

1.5 lbs chicken breast cut into strips

2 tsp. Garlic Pepper seasoning

1 tsp Ultimate Steak seasoning

2/3 cup flour

1 tsp smoked paprika

2 eggs

2 Tbs. water

2 tsp. Rustic Herb seasoning

2 cups sweetened coconut

Preheat your oven to 450.

Season your chicken with 1 tsp each of Garlic Pepper and Ultimate Steak seasonings.

Combine flour, 1 tsp Garlic Pepper, and smoked paprika.

Combine eggs, water, and Rustic Herb seasoning in a shallow dish.

Make sure you scramble that up.

Place coconut in another shallow dish and line them up assembly line style.

Now, we dip the chicken. Flour mixture first, then eggs, and lastly, coconut. Then place on a baking sheet with foil on it. I sprayed the foil with Pam.

Bake for 12 minutes; turn. Bake for another 8 minutes or until browned and internal temp is 165. Salt and pepper to taste. Although, we didn’t add any additional seasoning and it was perfect. I served it with some honey mustard (for my dip loving boys) but wasn’t necessary.

Cranberry Caramel Cobbler

Hey everyone…

I’ve got a GREAT one today. This is a great holiday dessert or a dessert for any day as a matter of fact. Today, we are going to make a Cranberry Caramel Cobbler. It’s a perfect blend of yummy apple flavor, the sweetness from the caramel sauce, and tartness of the cranberries. Let’s get started…

Preheat oven to 350

Ingredients:

12 oz bag of fresh cranberries

1 jar of Tastefully Simple’s Creamy Caramel sauce

1 box of Tastefully Simple’s Nana’s Apple cake mix

1 stick of butter, chunked up

In a bowl, mix together the cranberries and 2/3 of the caramel sauce.

In a separate bowl, combine the Nana’s apple cake mix with the chopped up butter. Mix until crumbly.

Grease up an 8×8 baking dish and put the cranberry mixture in.

Then, put the Nana cake mixture on top and drizzle the rest of the caramel sauce on top. IT DOES NOT HAVE TO BE PERFECT. 🙂

Bake in your oven 45 – 50 minutes and you get this yumminess…

Serve with ice cream and whipped topping, if desired. I served it straight up and everyone enjoyed it!
