Crockpot Chili

Hey everyone…

How’s everyone’s thursday going? Mine is off to a slow and sluggish start. Lol. You will have that when your almost two year old son doesn’t sleep through the night. So, I had a choppy night of sleep because my bubba had a choppy night of sleep.

I’ve got a quick and easy one for you today. Crockpot Chili! Everyone’s favorite. This is a crowd pleaser at a tailgate party, a potluck at work, or just a warm and hearty meal for the home. Here we go…


2 lbs of ground meat (of your choice)

1/4 cup of Wahoo Chili Seasoning (to taste)

40 ounce can of kidney beans

3 cans of diced tomatoes

1 – 15 ounce can of tomato sauce

cheese (for topping)

Let’s start. Brown up your ground meat. Rinse your kidney beans.


Wahoo Chili is the seasoning du jour. Not sure why I didn’t take a photo of it but here’s the stock photo. Lol.


Add the ground meat to your crock and add your seasoning. I would start with 3 Tbs first. Let it heat up and taste. Add more depending on taste.


Next is your tomatoes and tomato sauce…


Add them to the crock and stir.


I had this in the slow cooker on low for 8 hours. It filled the house with a great aroma. People love that smell of food cooking all day in the house. It’s comforting… Add to a bowl and top with cheese.

Simply Delicious Pork Tenderloin

Hey everyone…

I hope your weekends are getting off to a great start. Mine is. Yesterday was a jam packed day with my little guy. We were outside the whole day. I try to view the world, at times, through my son’s eyes. I wonder what he thinks. At times, he seems absolutely amazed at all of the goings on in the world. Two, what a great age! This was him playing around our tree yesterday…


Today, I have a super simple but extremely delicious Pork Tenderlion recipe. You will LOVE it!


1 package of pork tenderloin (it contains 2. We cooked them both and froze one for another dinner)

1/4 Tastefully Simple’s Onion Onion

1 can of cream of mushroom soup

2 cups of hot water

salt and pepper

flour for dredging

Olive oil

Ok, so let’s get started. Take your pork tenderloin out and season both sides with salt and pepper. Once seasoned, dredge in flour. Just a light coat on all sides because we are going to sear it in a pan and it will look like this:


Once both tenderloins are seared, place them in your baking dish.

Let’s put the sauce together. Bring 2 cups of water just to a boil. Remove from heat. Put in a bowl, add onion onion and cream of mushroom soup, and wisk together.


Pour over the pork tenderloins.


Bake in a preheated 400 degree oven for 1 hour and 15 minutes. This is what you will have when done.


Let rest for 5 minutes so the juices redistribute in the meat and slice. Plate up and enjoy!


This will melt in your mouth!

Baked Rigatoni with Sausage

Hey everyone…

I hope you are enjoying your friday as opposed to being freaked out because it’s Friday the 13th. Lol. It’s my ex-wife’s birthday today. Makes sense. Lol. I kid.

I wanted to share one of my all time favorite recipes today and that it Baked Ziti with sausage but I had rigatoni on hand so today, it’s Baked Rigatoni with Sausage. 🙂

Here goes:

I 28 ounce can of crushed tomatoes

1 15 ounce can of tomato sauce

3 Tbs Tastefully Simple’s Mama Mia Marinara Mix

1/4 cup park cheese (can be shaker cheese)

1 1lb box of ziti or rigatoni

2 cups of mozzarella

1lb of sausage (I used sweet italian as my wife does not like hot sausage but it can be used in stead)

Pre-heat your oven to 350

We are going to start with the tomato sauce, crushed tomatoes, mama mia seasoning, and parm cheese.


Throw those in a pot and simmer.


While that is going, add some sweet italian sausage to a pan and sautee. You will cook these for about 17 – 20 minutes over medium heat.

Once they were done, I cut them up into chunks.

When I threw the sausage in the pan, I also started my water for the pasta, It’s at a boil now…


I salted it at the beginning with kosher salt and now I want to add my pasta.


It cooked for about 12 minutes. JUST TIL AL DENTE. NO MUSHY PASTA HERE. Lol.

Once done, drain and throw in a baking dish.


Add the cut up sausage.


Remember that sauce that you had simmering on the stove, throw it on top.


Add cheese…


Cover the top of the baked rigatoni with said cheese.


Bake in that pre-heated 350 oven and remove when it starts to crust. About 25 minutes.


Plate and enjoy!

Roasted Potatoes

Hey everyone…

I’ve got a pretty simple but delicious side dish for you all, roasted potatoes. This is a crowd pleaser.


3 lbs diced potatoes (I used a gold potato)

1 tsp kosher salt

1 tsp black pepper

1 tsp tastefully simple seasoned salt

1/3 cup vegetable oil

To start, dice up 3 lbs of potatoes (your choice). I used a golden potato.


Once you have the potatoes all diced up, add the salt (I use coarse kosher), pepper (freshly ground, if available), tastefully simple’s seasoned salt (one of the best, in my opinion, and oil. Toss and put in a baker pan.


Place in a pre-heated 450 degree oven. You will need to mix them up every 15 minutes. I used a metal spoon and tossed them around. Cook for 1 hour.

Garlic Parm dipping sauce

Hey folks…

Here’s a quick hitter. Garlic Parm Dipping sauce. You can use this as a dip or you could use this as a topper on a chicken sandwich. Don’t blink because this one goes by quickly.

Start with 2 ingredients: Garlic Parm wing sauce by Tastefully Simple (1/4 cup) and Mayo (1/2 cup)


Throw them into a bowl.


Mix and serve


We used it on potatoes but, again, it can be served on chicken as well. Enjoy!

Pork and Sauerkraut w/kielbasa

Hey everyone…

I’ve got a super simple and super delicious. Pork and sauerkraut w/kielbasa. Now this is a mainstay as a New year’s meal but it makes a great fall comfort meal. I hope you enjoy it.

Here are the ingredients:

3 lb pork shoulder

1 lb kielbasa

Tastefully Simple’s Ultimate Steak seasoning

1/2 cup of brown sugar

1 – 2 lb bag of sauerkraut

I start with Ultimate steak seasoning.


It gas a great blend of salt, pepper, and garlic. There’s more in there but that is the predominate flavor profile. I sprinkle this on the pork roast and be as liberal as you want. Season to taste.


Cut up the kielbasa and place in the crock as well. Add a 1/2 cup of brown sugar.


Now, add the sauerkraut. Here is an option: you can either add everything straight from the bag or you can drain the sauerkraut but you will need to add a cup of water. I did not drain the sauerkraut.


Put the lid on that bad boy and put it on for 8 hours. When you do, the pork and kielbasa will melt in your mouth. This is a NO FAIL recipe!
